Sweet breakfasts [#3] Blueberry banana pancakes

Hey! Today, again a recipe for pancakes, but this time in a more traditional version. The preparation of banana pancakes is very simple, and they provide us with all the macronutrients we need. And when it comes to taste? Try the recipe and see for yourself!

Intro

My favorite part of this recipe is the fact that the banana gives us a sweet taste, so we don’t have to add any sweeteners. Of course, it is important that the bananas are ripe so that the pancakes will be tastier. And despite the high glycemic index of bananas, we don’t have to worry about a spike in blood sugar in this case. This is due to the fiber from oatmeal. It slows down the breakdown of sugars in the body, which improves your well-being and reduces the risk of diabetes. Okay, so now let’s move on to the recipe itself.

Ingredients

  • Oats 150g

  • Cow / vegetable milk 150g

  • 1 ripe banana ~120g

  • Peanut butter 30g

  • 1 egg

  • Handful of blueberries

Notes: With these proportions you have a portion for 1-2 people

Preparation

1. Except blueberries, place all ingredients in a bowl and blend them.

2. Add a handful of blueberries to the bowl.

3. Now heat up the pan and bake the pancakes over low/medium heat for 1-2 minutes on each side. One pancake size of one tablespoon. add a little bit of oil and spread it over the pan before frying. 1 pancake is about the size of a tablespoon.

4. And that’s the whole philosophy. You can enjoy such breakfast  at home, or conveniently pack it in a bag and take it to school or work.
